One Pan Roasted Pork and Veggies

Looking for a quick healthy meal without a lot of clean up? Look no further. This meal takes about 5 minutes to prep, and then is ready in about 35 minutes total.

First, preheat the oven to 400 F, then heat an oven safe pan on the stovetop using medium heat while you start chopping the vegetables. I used Brussels sprouts, broccoli and onions, but feel free to use this recipe to help clean out your vegetable drawer and experiment with whatever you have on hand. We were trying to use things up in the fridge as we sit waiting impatiently to find out if hurricane Dorian is really going to ever come visit or not.

I sprinkled the pork loin with salt and pepper and some Cajun seasoning and seared it for 2 minutes on all sides after the pan was warm. As I turned it the last time I spread the vegetables all around it. Season then with another touch of salt and pepper. Once the pork was seared carefully place the warm pan into the preheated oven and bake approximately 25 minutes or until a meat thermometer reads 170F.

Let the meat treat a few minutes and then slice and enjoy!
