Last week I saw these big fat deliciously sweet looking grapes calling to me from the produce row and I knew I just HAD to make this salad and share it with you!
I first tasted this grape salad about 12 years ago at a friend’s house. We raided her fridge in the aftermath of a baby shower and were rewarded with a big tray of mini chicken salad sandwiches and a big bowl of this amazing grape salad. I swear, it’s half dessert, half amazing side dish. It makes for a wonderful idea to take to a potluck, a ladies tea, baby shower, Easter get together, springtime picnic or a brunch. The original recipe is loaded with brown sugar (which of course makes it taste super wonderful) but in this version I have cleaned it up a bit so I don’t feel quite so guilty indulging.
What you need:
- 4 oz softened Neufchatel cheese
- ½ cup greek yogurt
- 1-2 TBSP pure maple syrup
- 1-2 pounds of seedless grapes
- chopped pecans or walnuts
That is it! Crazy how easy yummy can be.
Start by blending the Neufchatel (similar to cream cheese with less fat), yogurt and maple syrup until smooth. (I start with 1 TBSP of syrup and blend and then taste to see if I need more to get the right amount of sweetness).
4 ounces softened neufchatel cheese
1/2 cup plain greek yogurt
1-2 TBSP pure maple Syrup
Blend until smooth and creamy, adding Maple Syrup to desired sweetness
Fold in your cleaned seedless grapes (green or red or even a combination of the two) until covered and then top with chopped nuts of choice.
It looks beautiful served in a glass trifle dish or bowl. If you are taking this to a gathering don’t plan on bringing leftovers home! You can also easily double the recipe and just add enough grapes to keep the creamy sauce thin over them. Enjoy!!!
